During salmon season, the fish is prepared raw in many different ways. Salmon sushi is pressed in a rectangular box and sliced to make oshizushi, and raw salmon is spread over a bed of vinegared rice to make chirashizushi, salmon roe is served over a bed of vinegared rice for ikura-don. Smoked salmon is a specialty that you can take home.

Chippu

A specialty of Lake Shikotsuko, chippu is the local name for kokanee (or salmon). This particular salmon is good frozen, deep fried or on sushi. Chippu is available at restaurants near Lake Shikotsuko.

Fresh seafood is delicious when deep fried, served on sushi or just plain as sashimi (raw). A highly recommended place to enjoy such local dishes is Hanabusa Sushi (2 Chiyoda-cho, Chitose-shi TEL:0123-23-4201), a quiet restaurant located in the shopping district near Chitose Station. The restaurant has a branch in the New Chitose Airport.
