Sweetfish caught by cormorants on the Nishiki River is a delicacy. This fish is also called an "aromatic fish." As the name implies, it is very delicious prepared in all forms: grilled, boiled, fried, or raw.

Iwakuni Sushi (Lord's Sushi)

This is a molded sushi, not the hand pressed type. The rice is pressed in a square mold rather than shaped by hand. This is a popular Iwakuni-style sushi. This sushi is made luxuriously by boiling a large amount of rice, from 4 to 5 shos (1 sho = 0.48 gallon), and then mixing it with two different species of mackerel. This dish is served in many restaurants and hotels of Iwakuni. The dish is popular for its volume.

Taihei

This dish is made by boiling fresh vegetables, plants, and chicken. It is a simple dish, but is tasty because of its freshness and flavoring.

Vinegared Lotus Stem

Iwakuni is considered as one of the three major cultivation sites for the lotus stem, a delicacy since feudal times. Various dishes are made with this product. Its crunchy texture resembles the stem of a celery. Especially popular is its vinegared variation, which is served at celebrations.
