In this Japanese style spaghetti restaurant they start cooking pasta only after the order is taken. There is something unique about their cooking style. One thing is that the pasta would not be dressed with butter, nor any kind of oil is used for seasoning the ingredients. Another thing is the special sauce which is made from soup with scraped pieces of dried bonito. You will not get tired of the simple taste without any oily smell, and can enjoy the dish until the last bite. Particularly fresh ingredients are very appetizing. They serve a combination of curry and sweets, which makes this restaurant very unique. Five different types of roux are cooked for half a day before leaving still for more than two weeks. The chef is particular about every ingredient including the roux, miso, soy sauce, and rice. When you put the curry in your mouth, it is mild at first and later it gradually tastes hotter. The special attention to the roux as well as the careful cooking procedure may be the secret of the good taste. The combination of curry and sweets is unexpectedly delicious, especially the honey made from Okinawan brown sugar tastes excellent.
